Before it relocated to Milan, Fourghetti dazzled diners in Bologna. This iteration of the bistro, adorned with marble, wood and contemporary artworks strewn throughout various rooms, befits Giuseppe Gasperoni’s refined cooking. The chef, formerly of Michelin-starred Osteria del Povero Diavolo in Emilia-Romagna, has a flair for harmonious, sometimes unexpected, combinations expressed on a trinity of tasting menus. Beef cheek melds with Jerusalem artichoke and miso, for instance, while wild herb ravioli is paired with smoked ricotta and cod mingles with cauliflower and citrus. Kick off the meal, ensconced in a sage green banquette, with a bright apple kombucha and vodka elixir.
